Encouraged by the success of the celebrated Demeter Furmint Dry 2003, Demeter Zoltán, our artisan winemaker, handcrafted his latest specialty: a dry Hárslevelű imaginatively named Demeter "Z". Hill selective, from the Szerelmi hill, this Hárslevelű was ripened at 4 to 5 clusters load. At a low yield average, the relatively late harvest of healthy grapes took place on November 20. During the processing, the winemaker utilized the method of whole cluster pressing as well as varietal specific yeast inoculation. This was the first wine in which Demeter Zoltán used bacterial malolactic fermentation. 50% of the harvest was aged in new oak barrels while the other half in barrels of 1 year of age. The barrels were made from Hungarian oak by a Hungarian cooper.
